Mama’s Kofta

My mama and I always smile at each other when we cook this dish as my husband loves it and always complements us on how delicious it is.  This is despite the fact that the dish is packed full of parsley and Christopher insists that he absolutely hates the stuff….

Mama packs this dish full of herbs and spices and vegetables so that is fragrant, tasty, soft and very healthy.  We shape most of the meat into little burger style patties, but we always make a few smaller balls for Otis.

This is a great dish and is easy to prepare ahead and then cook or warm up right when you need it.  We often get this ready when the kids are taking their naps and then pop it in the oven 40 minutes before dinner.

ingredients

500g lean minced beef

1 tsp allspice

1 tsp mixed spice

½ tsp paprika

1 bunch of parsley

1 white onion

1 green pepper

4 tomatoes

1 tbs Extra virgin olive oil

Salt & pepper

 

method

Preheat the oven to 190c

In a blender, blitz together 1 tomato, the pepper, parsley and onion

Add the blitzed vegetable mixture to the meat and all the remaining spices

Work the meat until it is homogeneous and a bit sticky and then shape into patties

Place the meat onto a casserole dish

Slice the remaining tomatoes about 1cm thick so that you have one for each kofta

Drizzle with olive oil and sprinkle with salt and put in the preheated oven for 40-45 minutes

Pour Ba’dounsia over the kofta and serve with rice and green beans
