Summer Kufta

two things i just don’t understand about the English; 1) insisting on being in the garden and sitting in the midday sun in the boiling heat just to ‘make the most of it’ despite it being thoroughly uncomfortable and 2) not ‘fancying much’ to eat when its hot. Maybe this dish can convince you to eat some delicious kufta in the waning evening sun!

Bateekh wa Jibna

This dish reminds we of warm days followed by cool evenings in Palestine when the whole family gets together to chat, eat and relax. The watermelons in Palestine are huge oblongs that could feed a whole party. on hot days, i like to serve this dish when friends first arrive before we get the BBQ going as its so refreshing.

BBQ Herby, Garlicky vegetables

This is our alternative to vegetable kebabs. We cook the vegetables on skewers as you may expect but once they are all smoky and soft and cooked we push them off the skewers and coat in a delicious herby and garlicky dressing that is just perfect: fresh, light and delicious. these accompany meat and fish on the BBQ perfectly.
