Kousa Nuggets

when you have a three year old, a lot of food starts being referred to as a ‘nugget’. We always make these a day or two after we make mahshi with the pulp of the courgettes that have been cored out. they are utterly delicious and make a great lunch with a nice fil-fil dip and salad.

ingredients

4 cups of courgette pulp

2 cups of plain flower

1 cup of corn flour

1 onion, peeled

2 garlic cloves, peeled

handful of fresh parsley

2 tsp salt

1 tsp paprika

a few cups of vegetable oil to fry

method

put all the ingredients into a food processor and mix for 3-5 minutes until you get a good thick paste consistency.

put the vegetable oil into a frying pan and heat the oil.

using tablespoons, scoop nuggets of the mixture into the hot oil and fry for a few minutes on both sides until browned.
