
for me, the ultimate smell of a Palestinian dinner is chargrilled Chicken. so fragrant and moist. just perfect. this is a very simple way to prepare the chicken which is great considering all the work done on the side dishes.

ingredients
4 chicken supreme
for the marinade
2 tbsp extra virgin olive oil
2 tbsp passata
1 chili
2 garlic cloves
1 tsp timeric
1 tsp mixed spice
salt & pepper
a pinch of sugar
method
put all the marinade ingredients into a food processor until a nice fine liquid is created. add a bit more oil if neccessary.
put the chicken into the marinade and cover and put in the fridge. if you can do this the day before you eat them its best. if you cant, then do it in the morning.
cook on the BBQ until perfectly griddled and still moist inside.
