This is our alternative to vegetable kebabs. We cook the vegetables on skewers as you may expect but once they are all smoky and soft and cooked we push them off the skewers and coat in a delicious herby and garlicky dressing that is just perfect: fresh, light and delicious. these accompany meat and fish on the BBQ perfectly.
2 courgettes, thickly sliced
4 peppers- red, yellow, green, cut into squares
1 red onion, in wedges
4 tomatoes, quartered
for the dressing
bunch of mint
bunch of parsley
1 cloves of garlic, crushed
juice of 1 lemon
3 tbsp extra virgin olive oil
salt & pepper
skewer the vegetables onto skewers and place into a hot BBQ.
once char-grilled and smoky take them off and push them int a bowl/ serving plate and
coat with half the dressing and serve the remaining half in a bowl along side the vegetables.
